An octopus to help your wine breathe
Filed under: Tastings , Wine , Food Gadgets I must confess that I don't think too much about aerating wines before I drink them other than giving a red a couple of swirls around an oversized glass and letting it set for a few minutes before drinking. Of course, I'm not generally drinking wines ... and the wine is poured over it, aerating as it flows. The way the stream of wine is interrupted...

My Top 10 Wine Gadgets
Aside from a corkscrew, the two wine accoutrements I use almost as frequently are a decanter, for warming up and aerating chilled wines, and a funnel, which I use to return the wine to its vessel. Which started me thinking about the essential wine gadgets every wine lover must have, and thanks to my tasting staff, here's a list of things we use regularly and think you'll find handy too...
Seeking help from any of you aged Bordeaux fans
Posted by Noel:
I agree with Rod. For Bordeaux that old, check it first before aerating.
Personally, I think stand it up for at least 10 hours before opening and decant just to get rid of sediment, then pour in glass. Let it breathe in the glass so you can smell and si...

TN: Hune are you?
Trimbach 1995 Riesling Clos Ste-Hune (Alsace) – After aggressive decanting and an hour or so warming and aerating in both decanter and glass, this is only just barely getting off the ground. Not unexpected. What’s discernable: oyster shells collected at the base of a hypercube; all slashing angles and sharp acidity shattering the boundaries of dimension. Grapefruit rind, mineral soda...

Racking
The racking of our 2007 reds is in full swing. Between bottlings (our 2006 Chardonnays go to glass at the end of next week) we are getting to the first round of our aerating rackings (see photos). After pumping the clear wine off the gross lees, we splash the young wine though a rough screen and then on to tank. The screen removes and solids (skins or seeds) and also aerates the wine...
